Dressing
  • 2 tablespoons olive oil
  • 1 tablespoon lemon juice

Preparation
  1. Begin by rinsing and draining the canned chickpeas. Dice the cucumber, bell pepper, and red onion, and halve the cherry tomatoes. Chop the parsley.
Combine Base Ingredients
  1. In a large mixing bowl, add the chickpeas, diced cucumber, bell pepper, red onion, and cherry tomatoes.
Dress the Salad
  1. In a small bowl, whisk together the olive oil, lemon juice, salt, and pepper. Pour this dressing over the salad ingredients.
Toss to Combine
  1. Gently toss everything together until all ingredients are evenly coated with the dressing.
Garnish and Serve
  1. Finally, sprinkle the chopped parsley on top and serve chilled or at room temperature.

Notes
