  • 1 can chickpeas, drained and rinsed Make sure they are Halal-friendly.
  • 1 cucumber, diced
  • 1 bell pepper, diced
  • 1 red onion, finely chopped
  • 1 cup cherry tomatoes, halved
  • 1/4 cup fresh parsley, chopped
Dressing
  • Juice of 1 lemon
  • 2 tablespoons olive oil
  • to taste salt and pepper

Preparation
  1. Start by draining and rinsing your chickpeas. This helps get rid of excess sodium and keeps them fresh.
  2. Dice the cucumber and bell pepper, finely chop the red onion and parsley, and halve your cherry tomatoes. The more colorful your veggies, the more visually appealing your salad will be!
  3. In a large mixing bowl, combine the chickpeas, cucumbers, bell pepper, red onions, tomatoes, and parsley.
  4. Squeeze the juice of one lemon over the mixture and drizzle in the olive oil.
  5. Add salt and pepper to your liking, then toss everything together until well mixed.
  6. For best results, let the salad sit in the fridge for about 15-30 minutes before serving. This will help the flavors meld beautifully!

Notes

Consider adding corn, grated carrots, or avocado for a creamier texture. Make sure not to overmix to keep the ingredients crisp. Store in an airtight container in the refrigerator for up to 3 days.
