  • 1 cup creamy peanut butter
  • 1 cup granulated sugar
  • 1 large egg
  • 1 teaspoon baking soda
  • 1 teaspoon vanilla extract
  • 1/2 cup mini chocolate chips (optional) Optional for added chocolate flavor.
  • 1 cup chopped Reese's Peanut Butter Cups (about 10-12 cups)

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a mixing bowl, combine the peanut butter, granulated sugar, egg, baking soda, and vanilla extract. Mix until well blended.
  3. Gently fold in the chopped Reese's Peanut Butter Cups and optional mini chocolate chips.
  4. Scoop about a tablespoon of the dough and roll it into balls. Place them on a parchment-lined baking sheet, leaving space between each cookie.
  5. Bake in the preheated oven for 10-12 minutes or until the edges are lightly browned. The centers may look slightly underbaked.
  6. Remove from the oven and let cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.

Notes

Chill the dough for about 30 minutes for enhanced flavors and to prevent spreading. Store in an airtight container for up to a week, refrigerate for two weeks, or freeze for up to three months.
