Preparation
- Preheat your oven to 350°F (175°C).
- In a mixing bowl, combine the peanut butter, granulated sugar, egg, baking soda, and vanilla extract. Mix until well blended.
- Gently fold in the chopped Reese's Peanut Butter Cups and optional mini chocolate chips.
- Scoop about a tablespoon of the dough and roll it into balls. Place them on a parchment-lined baking sheet, leaving space between each cookie.
- Bake in the preheated oven for 10-12 minutes or until the edges are lightly browned. The centers may look slightly underbaked.
- Remove from the oven and let cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
Notes
Chill the dough for about 30 minutes for enhanced flavors and to prevent spreading. Store in an airtight container for up to a week, refrigerate for two weeks, or freeze for up to three months.
