Preparation
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a medium bowl, whisk together flour, cocoa powder, baking soda, and salt. Set aside.
- In a large bowl, beat the softened butter, granulated sugar, and brown sugar together until light and fluffy.
- Beat in the egg, vanilla extract, and red food coloring until the mixture is smooth and fully combined.
- Gradually add the dry ingredients to the wet mixture, mixing until just combined.
- Gently fold in the white chocolate chips until evenly distributed throughout the dough.
Baking
- Use a cookie scoop or tablespoon to drop rounded balls of dough onto the prepared baking sheet, spacing them about 2 inches apart.
- Bake for 10-12 minutes, or until the edges are set.
- Let the cookies cool on the baking sheet for a few minutes, then transfer them to a wire rack to cool completely.
Notes
For thicker cookies, consider chilling the dough in the refrigerator for about 30 minutes before baking to prevent spreading. Pair these cookies with a glass of cold milk, vanilla ice cream, or whipped cream.
