  • 2 cups all-purpose flour
  • 1 cup sugar
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1 teaspoon cocoa powder
  • 0.5 teaspoon salt
  • 1 cup vegetable oil
  • 1 cup buttermilk
  • 2 large eggs
  • 2 tablespoons red food coloring
  • 1 teaspoon vanilla extract
For the Cream Cheese Filling
  • 8 oz cream cheese, softened
  • 0.5 cup powdered sugar
  • 1 teaspoon vanilla extract

Preparation
  1. Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. In a bowl, whisk together flour, sugar, baking soda, baking powder, cocoa powder, and salt.
  3. In another bowl, combine oil, buttermilk, eggs, food coloring, and vanilla extract. Mix until smooth.
  4. Gradually add the dry ingredients into the wet ingredients, stirring until just combined. Avoid over-mixing!
  5. In a separate bowl, beat together the softened cream cheese, powdered sugar, and vanilla extract until creamy.
  6. Fill the muffin tin with half of the red velvet batter, then add a spoonful of the cream cheese filling to each muffin cup, followed by another layer of batter on top.
Baking
  1. Place in the oven and bake for about 20 minutes, or until a toothpick inserted comes out clean.
