  • 2 cups rolled oats Use old-fashioned oats for best results.
  • 1 cup flour All-purpose flour recommended.
  • 1/2 cup brown sugar Packed brown sugar adds moisture.

  • 1/2 teaspoon baking soda Helps with leavening.
  • 1/2 cup unsalted butter, melted Let it cool slightly before mixing.
For the Raspberry Filling
  • 2 cups raspberries (fresh or frozen) Fresh raspberries yield the best flavor.
  • 1/4 cup sugar Adjust sweetness to taste.
  • 1 tablespoon lemon juice Adds brightness to the filling.

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a bowl, toss the raspberries with 1/4 cup sugar and lemon juice. Let this sit while preparing the base.
  3. In a large mixing bowl, combine rolled oats, flour, brown sugar, salt, and baking soda. Stir in the melted butter until the mixture resembles coarse crumbs.
  4. Press half of the oat mixture into the bottom of a greased 9x9-inch baking pan.
  5. Spread the raspberry mixture evenly over the oat base and sprinkle the remaining oat mixture on top.
Baking
  1. Bake for 30-35 minutes or until the top is golden brown.
Serving
  1. Allow the bars to cool in the pan for at least 10 minutes before slicing into squares. Serve warm or at room temperature.

Notes

Store leftovers in an airtight container in the refrigerator for up to a week or freeze for up to three months. Thaw at room temperature or warm in the oven for best results.
