  • 1 cup almond milk Can substitute with coconut milk or oat milk.
  • 1/4 cup chia seeds
  • 2 cups fresh raspberries Reserve a few for garnish.
  • 2 tablespoons honey or maple syrup Adjust sweetness to taste.
  • 1 teaspoon vanilla extract

Method
 

Preparation
  1. Pour 1 cup of almond milk into a mixing bowl to serve as the creamy base.
  2. Add in 1/4 cup of chia seeds and stir well to ensure they are evenly distributed.
  3. Stir in 2 tablespoons of honey or maple syrup and 1 teaspoon of vanilla extract.
  4. Mix thoroughly, cover with plastic wrap or transfer to an airtight container, and refrigerate for at least 4 hours.
  5. Before serving, gently fold in 2 cups of fresh raspberries, reserving a few for garnish.
  6. Scoop the pudding into bowls, garnish with reserved raspberries, and serve.

Notes

For best results, allow the pudding to sit overnight. Stir vigorously after the first 10 minutes of refrigeration to avoid clumping.
