Preparation
- Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
- In a large mixing bowl, whisk together the flour, sugar, baking powder, and salt until well combined.
- Using a pastry cutter or your fingers, cut in the cold, cubed butter until the mixture resembles coarse crumbs.
- In a separate bowl, combine the heavy cream and almond extract. Pour this mixture into the dry ingredients and stir until just combined.
- Gently fold in the fresh raspberries.
- Transfer the dough onto a floured surface and gently shape it into a circle about 1-inch thick. Cut the dough into triangles or use a biscuit cutter for round shapes.
- Place the scones on the prepared baking sheet and brush the tops with the beaten egg. Sprinkle with sliced almonds.
Baking
- Bake in the preheated oven for 15-20 minutes or until golden brown.
- Remove them from the oven and let them cool slightly.
- Enjoy warm or at room temperature!
Notes
For perfect scones, avoid overmixing the dough. Store in an airtight container at room temperature for up to 3 days or freeze for up to 3 months. Reheat in a preheated oven at 350°F (175°C) for about 10 minutes.
