Ingredients
  

Dry Ingredients
  • 1 cup quinoa flour
  • 1/2 cup almond flour Can be substituted with oat flour or another nut flour.
  • 1/2 teaspoon salt
  • 1 teaspoon baking powder
Wet Ingredients
  • 2 large eggs For a vegan option, replace with flaxseed meal (1 tbsp mixed with 3 tbsp water per egg).
  • 1/4 cup olive oil
  • 1 cup water
  • 1 tablespoon honey or maple syrup Optional for sweetness.

Method
 

Preparation
  1. Preheat your oven to 375°F (190°C).
  2. In a large bowl, combine quinoa flour, almond flour, salt, and baking powder. Whisk lightly to blend.
  3. In a separate bowl, whisk together the eggs, olive oil, and water until smooth. Add honey or maple syrup if desired.
  4. Slowly pour the wet mixture into the dry ingredients, stirring continuously until a thick batter forms.
  5. Grease a loaf pan with olive oil to prevent sticking.
Baking
  1. Pour the batter into the prepared loaf pan and spread evenly.
  2. Bake for 25-30 minutes or until golden brown and a toothpick comes out clean.
  3. Allow to cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.

Notes

Store in an airtight container at room temperature for up to three days or freeze for up to three months. Reheat in a toaster or oven at 350°F (175°C) for 5-10 minutes.
