Preparation
- Preheat your oven to 375°F (190°C).
- In a large bowl, combine quinoa flour, almond flour, salt, and baking powder. Whisk lightly to blend.
- In a separate bowl, whisk together the eggs, olive oil, and water until smooth. Add honey or maple syrup if desired.
- Slowly pour the wet mixture into the dry ingredients, stirring continuously until a thick batter forms.
- Grease a loaf pan with olive oil to prevent sticking.
Baking
- Pour the batter into the prepared loaf pan and spread evenly.
- Bake for 25-30 minutes or until golden brown and a toothpick comes out clean.
- Allow to cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
Notes
Store in an airtight container at room temperature for up to three days or freeze for up to three months. Reheat in a toaster or oven at 350°F (175°C) for 5-10 minutes.
