  • 1.5 pounds boneless, skinless chicken thighs, cut into bite-size pieces
  • 3 tablespoons olive oil For marinating
  • 2 teaspoons dried oregano
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and black pepper to taste
For the Feta Tzatziki
  • 1 cup Greek yogurt
  • ½ cup feta cheese, crumbled
  • 1 medium cucumber, grated and drained
  • 2 tablespoons lemon juice
  • 1 teaspoon garlic, minced
  • Fresh dill (optional, for garnish)
For Serving
  • Pita bread or wraps
  • Chopped lettuce
  • Diced tomatoes
  • Sliced red onion

Preparation
  1. Start by preheating your oven to 400°F (200°C).
  2. In a large bowl, combine the olive oil, dried oregano, garlic powder, onion powder, salt, and black pepper. Add the chicken pieces, ensuring they’re well-coated in the marinade.
Cooking
  1. Spread the marinated chicken pieces evenly on a sheet pan lined with parchment paper. Bake for 25-30 minutes or until the chicken is cooked through and golden brown.
  2. While the chicken is baking, prepare the tzatziki sauce. In a bowl, mix the Greek yogurt, crumbled feta, grated cucumber, lemon juice, minced garlic, and a pinch of salt. Stir until well combined.
Serving
  1. Once the chicken is done, remove it from the oven and let it rest for a few minutes. Warm the pita bread in the oven or on a skillet.
  2. Assemble your gyros by placing the chicken on the pita, topping it with tzatziki, and adding your favorite toppings.

Notes

For leaner options, substitute chicken breasts for thighs. Ensure chicken is evenly spread on the pan to cook uniformly. Avoid overcrowding to prevent steaming.
