  • 2 tablespoons olive oil
  • 1/2 cup grated Parmesan cheese
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon Italian seasoning

Preparation
  1. Preheat your oven to 425°F (220°C).
  2. Wash the zucchinis thoroughly and slice them into half-moons about 1/4 inch thick.
  3. In a large mixing bowl, toss the zucchini slices with olive oil, salt, pepper, garlic powder, and Italian seasoning, ensuring each piece is evenly coated.
  4. Sprinkle the grated Parmesan cheese over the seasoned zucchini and toss again to coat.
  5. Spread the zucchini mixture in a single layer on a baking sheet lined with parchment paper.
  6. Roast in the preheated oven for 15-20 minutes, until the zucchini is tender and the cheese is golden brown.
  7. Once done, let the zucchini cool for a couple of minutes before serving warm.

Notes

Substitutions: Use Pecorino Romano or nutritional yeast for a vegan option. Watch zucchinis closely towards the end of roasting to avoid burning. Ensure uniform slice thickness for even cooking.
