- Wash the zucchinis thoroughly and slice them into half-moons about 1/4 inch thick.
- In a large mixing bowl, toss the zucchini slices with olive oil, salt, pepper, garlic powder, and Italian seasoning, ensuring each piece is evenly coated.
- Sprinkle the grated Parmesan cheese over the seasoned zucchini and toss again to coat.
- Spread the zucchini mixture in a single layer on a baking sheet lined with parchment paper.
- Roast in the preheated oven for 15-20 minutes, until the zucchini is tender and the cheese is golden brown.
- Once done, let the zucchini cool for a couple of minutes before serving warm.
Notes
Substitutions: Use Pecorino Romano or nutritional yeast for a vegan option. Watch zucchinis closely towards the end of roasting to avoid burning. Ensure uniform slice thickness for even cooking.
