  • 1 pound shrimp, peeled and deveined Use the freshest shrimp possible
  • 1 cup freshly squeezed lime juice (about 8-10 limes) Lime juice 'cooks' the shrimp
  • 1 ripe mango, diced
  • 1 ripe avocado, diced Store separately if making leftovers
  • 1/2 medium red onion, diced
  • 1 medium jalapeño, seeded and minced (optional for heat) Adjust according to spice tolerance
  • 1/4 cup fresh cilantro, chopped
  • to taste Salt and pepper

Method
 

Preparation
  1. In a bowl, combine cleaned shrimp with lime juice. Make sure the shrimp is completely submerged. Cover the bowl and refrigerate for about 15 minutes.
  2. Once the shrimp is opaque and firm, strain it from the lime juice, reserving a bit of the juice for extra flavor.
  3. In a large mixing bowl, combine the shrimp, diced mango, avocado, red onion, jalapeño, cilantro, salt, and pepper. Gently toss until everything is well mixed.
  4. Let the ceviche chill for an additional 10 minutes in the fridge to allow the flavors to meld together.
  5. Serve chilled and enjoy every juicy bite!

Notes

For best results, use the freshest shrimp available and try substituting mango with pineapple for variation. Ceviche is best enjoyed cold and should be consumed within 24 hours.
