Ingredients
  

For the Marinade
  • 1/4 cup olive oil
  • 1/4 cup lemon juice
  • 3 cloves garlic, minced
  • 2 tsp paprika
  • 1 tsp onion powder
  • 1 tsp cumin
  • 1/2 tsp black pepper
  • 1 tsp salt
  • 1 tsp dried oregano

  • 2 lbs chicken breast, boneless and skinless

Method
 

Preparation
  1. In a medium bowl, whisk together olive oil, lemon juice, minced garlic, paprika, onion powder, cumin, black pepper, salt, and oregano.
  2. Put the chicken breasts in a resealable plastic bag or a shallow dish. Pour the marinade over the chicken, ensuring each piece is well-coated. Seal the bag and refrigerate for at least 15 minutes.
  3. While the chicken marinates, preheat your grill to medium-high heat.
Grilling
  1. Remove the chicken from the fridge and let it sit at room temperature for 5 minutes.
  2. Grill each chicken breast for about 6-7 minutes on each side or until the internal temperature reaches 165°F (75°C).
Serving
  1. Once cooked, let the chicken rest for 5 minutes before slicing to allow the juices to redistribute.

Notes

For substitutions, try chicken thighs or fish fillets. Aim for at least 15 minutes of marinating time for the best flavor. Don't skip the resting period after grilling to keep the chicken juicy.
