  • 1 pound ground beef or turkey (Halal)
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 can (15 oz) corn, drained
  • 1 package taco seasoning (check for Halal)
  • 1 cup salsa (make sure it’s a Halal brand)
  • 2 cups tortilla chips, crushed
  • 1 cup shredded cheese (like cheddar or a Mexican blend)
  • 1 cup sour cream (optional)
  • 1/4 cup chopped green onions (optional)

Method
 

Preparation
  1. Preheat the oven to 350°F (175°C).
  2. In a large skillet over medium heat, brown the ground beef or turkey until fully cooked (about 5-7 minutes). Drain any excess fat.
  3. Stir in black beans, corn, taco seasoning, and salsa into the skillet with the cooked meat. Mix well and let simmer for about 5 minutes.
  4. In a 9x13 inch baking dish, layer half of the crushed tortilla chips at the bottom.
  5. Pour the meat and bean mixture over the chips and top with shredded cheese.
  6. Bake for about 20 minutes or until the cheese is bubbly and slightly golden.
  7. Remove from the oven and top with sour cream and chopped green onions if desired. Serve hot.

Notes

Feel free to substitute ingredients like ground chicken or tofu for a vegetarian option. Store leftovers in the refrigerator for up to 3 days or freeze for up to 3 months.
