- In a large skillet, heat the vegetable oil over medium heat.
- Add the ground chicken, breaking it apart with a spatula. Cook until browned and fully cooked through, about 5-7 minutes.
- Stir in the minced garlic and ginger, cooking for an additional 1-2 minutes until fragrant.
- Add diced bell pepper and chopped water chestnuts to the skillet. Stir to combine and cook for another 3-4 minutes until the peppers are tender.
- Pour in the soy sauce, hoisin sauce, and rice vinegar. Mix everything thoroughly so the chicken and vegetables are well coated. Allow this to cook for another minute.
- Remove the skillet from the heat and let it cool for a minute. Spoon the chicken mixture into the lettuce leaves, topping with green onions, cilantro, and crushed peanuts if desired.
- Arrange the filled lettuce wraps on a platter and serve them immediately.
Notes
You can use ground turkey or crumbled tofu as substitutes for ground chicken. Prep the chicken mixture in advance for convenience.
