Preparation
- Preheat your oven to 400°F (200°C).
- Rinse the cod fillets under cold water and pat them dry with paper towels. Place them in a greased baking dish.
- In a bowl, mix together the mayonnaise, grated Parmesan cheese, lemon juice, garlic powder, salt, and pepper until well combined.
- Generously spread the mayonnaise mixture over the top of each cod fillet, ensuring they’re well coated.
Cooking
- Place the baking dish in the preheated oven and bake for about 15-20 minutes, or until the cod is cooked through and flakes easily with a fork.
- If desired, sprinkle chopped parsley on top and serve hot alongside your favorite sides.
Notes
Store any uneaten cod in an airtight container in the fridge for up to 3 days. To reheat, place the cod back in a preheated oven (around 350°F or 175°C) for about 10 minutes until warmed through.
