  • 4 fillets fillets of fresh cod (about 6 oz each)
  • cup mayonnaise
  • ½ cup grated Parmesan cheese
  • 1 teaspoon lemon juice
  • 1 teaspoon garlic powder
  • ½ teaspoon salt
  • ½ teaspoon pepper
  • to taste chopped parsley for garnish Optional

Method
 

Preparation
  1. Preheat your oven to 400°F (200°C).
  2. Rinse the cod fillets under cold water and pat them dry with paper towels. Place them in a greased baking dish.
  3. In a bowl, mix together the mayonnaise, grated Parmesan cheese, lemon juice, garlic powder, salt, and pepper until well combined.
  4. Generously spread the mayonnaise mixture over the top of each cod fillet, ensuring they’re well coated.
Cooking
  1. Place the baking dish in the preheated oven and bake for about 15-20 minutes, or until the cod is cooked through and flakes easily with a fork.
  2. If desired, sprinkle chopped parsley on top and serve hot alongside your favorite sides.

Notes

Store any uneaten cod in an airtight container in the fridge for up to 3 days. To reheat, place the cod back in a preheated oven (around 350°F or 175°C) for about 10 minutes until warmed through.
