Preparation
- Preheat your oven to 450°F (232°C) and let it heat up while you prepare the dough.
- In a large mixing bowl, whisk together the flour, baking powder, and salt until well combined.
- Add the cold, diced butter to the dry ingredients. Use a pastry cutter or your fingers to blend until the mixture resembles coarse crumbs.
- Pour in the milk and stir gently until a dough forms. Be careful not to overmix—lumps are perfectly fine!
- Lightly flour a clean surface and turn the dough out. Gently knead the dough about 5-6 times until it holds together.
- Roll the dough to about 1-inch thickness and use a biscuit cutter (or a glass) to cut out rounds. Place them on a baking sheet lined with parchment paper, making sure they’re close together.
- Put your biscuits in the oven and bake for 10-12 minutes, or until golden brown on top. Resist the temptation to peek too soon!
- Remove from the oven and let them cool slightly before serving warm, perhaps with a drizzle of honey or a pat of butter.
Notes
For best results, ensure butter is cold. Consider substituting half the milk with buttermilk for extra tang. Avoid overmixing to prevent tough biscuits.
