  • 4 oz feta cheese, crumbled Can substitute with creamy goat cheese or vegan feta.
  • 1/4 cup cream cheese, softened
  • 1 tablespoon olive oil Add more if the dip is too thick.
  • 1 clove garlic, minced
  • 1 teaspoon paprika Add more for extra flavor.
  • to taste Salt and pepper
  • Fresh herbs (optional, for garnish) Add for extra flair.

Method
 

Preparation
  1. In a mixing bowl, combine the canned pumpkin, crumbled feta cheese, cream cheese, and minced garlic.
  2. Using an electric mixer or a food processor, blend all the ingredients until the mixture is smooth and creamy.
  3. Drizzle in the olive oil and add the paprika. Season with salt and pepper according to your taste. Blend again until thoroughly mixed.
  4. Give it a quick taste and adjust seasoning if necessary. If you're feeling adventurous, add a sprinkle of more paprika for that extra zing!
  5. Transfer the dip to your serving bowl, and if using, garnish it with fresh herbs. Serve immediately or chill in the refrigerator before serving.

Notes

Store leftovers in an airtight container in the refrigerator for up to one week. Can freeze for up to three months. Thaw overnight in the refrigerator and stir well before serving. Add a splash of olive oil if the dip is thick after freezing.
