Preparation
- Preheat your oven to 350°F (175°C). Grease a loaf pan with a bit of oil or use parchment paper for easy removal.
Mixing Ingredients
- In a large mixing bowl, whisk together the canned pumpkin puree, vegetable oil, and both sugars until well-combined. Add the eggs, mixing until smooth.
Combine Dry Ingredients
- In another bowl, sift together the flour, baking soda, cinnamon, nutmeg, and salt.
- Gradually add the dry ingredients to the wet mixture, stirring just until combined. Do not overmix! If using nuts, fold them in now.
Prepare Streusel Topping
- In a separate bowl, mix together equal parts flour, sugar and melted butter to create a crumbly topping. Feel free to add your favorite spices to this blend!
Assembly and Baking
- Pour your bread batter into the prepared loaf pan and sprinkle the streusel topping evenly over the surface.
- Place in the oven and bake for about 55-65 minutes, or until a toothpick inserted comes out clean.
Cooling and Serving
- Let it cool in the pan for about 10 minutes, then transfer to a wire rack to cool completely. Slice and savor!
Notes
Store at room temperature for 2-3 days or refrigerate for up to a week. Can be frozen for up to 3 months. Warm in the microwave or oven before serving.
