  • 1/2 cup sugar
  • 1/2 cup brown sugar
  • 2 large eggs
Dry Ingredients
  • 1 1/2 cups all-purpose flour Consider gluten-free flour if needed
  • 1 teaspoon baking soda
  • 1 teaspoon cinnamon
  • 1/2 teaspoon nutmeg
  • 1/4 teaspoon salt
  • 1/2 cup chopped nuts Optional
Streusel Topping
  • 1/4 cup streusel topping (made of flour, butter, sugar, and spices) Mix equal parts flour, sugar, and melted butter

Method

Preparation
  1. Preheat your oven to 350°F (175°C). Grease a loaf pan with a bit of oil or use parchment paper for easy removal.
Mixing Ingredients
  1. In a large mixing bowl, whisk together the canned pumpkin puree, vegetable oil, and both sugars until well-combined. Add the eggs, mixing until smooth.
Combine Dry Ingredients
  1. In another bowl, sift together the flour, baking soda, cinnamon, nutmeg, and salt.
  2. Gradually add the dry ingredients to the wet mixture, stirring just until combined. Do not overmix! If using nuts, fold them in now.
Prepare Streusel Topping
  1. In a separate bowl, mix together equal parts flour, sugar and melted butter to create a crumbly topping. Feel free to add your favorite spices to this blend!
Assembly and Baking
  1. Pour your bread batter into the prepared loaf pan and sprinkle the streusel topping evenly over the surface.
  2. Place in the oven and bake for about 55-65 minutes, or until a toothpick inserted comes out clean.
Cooling and Serving
  1. Let it cool in the pan for about 10 minutes, then transfer to a wire rack to cool completely. Slice and savor!
