  • 1 tablespoon pumpkin pie spice
  • 1 teaspoon baking powder

  • 1 cup brown sugar, packed
  • 1/2 cup pumpkin puree
  • 1 large egg
  • 1 teaspoon vanilla extract

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.
  2. In a bowl, whisk together the flour, pumpkin pie spice, baking powder, baking soda, and salt. Set aside.
Mixing
  1. In a large mixing bowl, cream together the softened butter and brown sugar until well-combined.
  2. Add the pumpkin puree, egg, and vanilla extract, mixing until creamy and smooth.
  3. Gradually add the dry ingredient mixture to the wet ingredients, stirring until just combined.
Baking
  1. Drop spoonfuls of dough onto the prepared baking sheet, spacing them a couple of inches apart.
  2. Bake in the preheated oven for about 10-12 minutes, or until the edges begin to golden.
Finishing Touches
  1. Allow the cookies to cool for a few minutes on the baking sheet before transferring them to a wire rack.
  2. Once cool, drizzle with cream cheese icing for an added treat.

Notes
