Method
Preheat the Oven
- Preheat your oven to 350°F (175°C).
Prepare the Cookie Dough
- In a large mixing bowl, combine the pumpkin puree, brown sugar, granulated sugar, melted butter, egg, and vanilla extract. Stir until well mixed and creamy.
Mix the Dry Ingredients
- In another bowl, whisk together the all-purpose flour, baking soda, baking powder, salt, and pumpkin pie spice.
- Gradually add the dry ingredients to the wet mixture, stirring until just combined.
Add the Fun Stuff
- Gently fold in the chocolate chips and mini marshmallows.
Shape and Bake
- Using a cookie scoop or two spoons, drop portions of dough onto parchment-lined baking sheets.
- Generously sprinkle the tops with graham cracker crumbs.
Bake
- Bake in the preheated oven for 12-15 minutes, or until the edges are lightly golden.
Cool and Enjoy
- Let the cookies cool on the baking sheets for a couple of minutes before transferring them to a wire rack to cool completely.
