Ingredients
  

Wet Ingredients
  • 1 cup pumpkin puree
  • 4 large eggs
  • 1/2 cup vegetable oil
  • 1 teaspoon vanilla extract
Dry Ingredients
  • 2 cups all-purpose flour Can substitute with whole wheat flour.
  • 1 cup granulated sugar Can substitute half with a sugar alternative.
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/2 teaspoon salt
Finishing Touch
  • Powdered sugar For dusting before serving.

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a bowl, combine pumpkin puree, eggs, vegetable oil, and vanilla extract. Whisk until smooth and well-blended.
  3. In a separate bowl, sift together all-purpose flour, granulated sugar, baking powder, baking soda, ground cinnamon, ground nutmeg, and salt.
  4. Gradually fold the dry mixture into the wet mixture, stirring gently until just combined. Be careful not to overmix!
  5. Grease a rectangular baking sheet or dish, and pour the batter in, spreading it evenly.
Baking
  1. Place the baking dish in the preheated oven and bake for approximately 25-30 minutes, or until a toothpick inserted in the center comes out clean.
Finishing Touch
  1. After baking, let the rolls cool for a few minutes. Dust with powdered sugar before serving.

Notes

For storage, refrigerate in an airtight container for up to 3 days or freeze for up to 2 months. Reheat in the oven or microwave.
