  • 1/2 cup pumpkin puree
  • 1/2 cup milk
  • 1/4 cup vegetable oil
  • 2 large eggs
  • 1 teaspoon vanilla extract

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. Grease a standard loaf pan (9 x 5 inches).
  3. In a mixing bowl, blend the flour, baking powder, salt, cinnamon, nutmeg, and ginger together.
  4. In another bowl, whisk the sugar, pumpkin puree, milk, vegetable oil, eggs, and vanilla extract until smooth.
  5. Gradually fold the dry ingredients into the wet mixture, stirring until just combined.
  6. Pour the batter into the prepared loaf pan and smooth the top.
Baking
  1. Bake for 40-45 minutes, or until a toothpick inserted into the center comes out clean.
  2. Cool in the pan for 10 minutes, then transfer to a wire rack to cool completely before slicing.

Notes

For variations, you can substitute allspice for ginger or add nuts or chocolate chips for extra flavor. Store the loaf wrapped tightly in plastic wrap for up to 3 days at room temperature or freeze for up to 3 months.
