  • 1 cup pumpkin puree
  • 1 cup rolled oats
  • 1/2 cup protein powder Choose a protein powder that aligns with your dietary preferences.
  • 1/4 cup almond butter Can substitute with peanut butter or sunflower seed butter.
  • 1/4 cup honey or maple syrup
  • 1 teaspoon cinnamon
  • 1/2 teaspoon nutmeg
  • 1/4 cup chocolate chips (optional) Can be omitted if desired.

Preparation
  1. In a large mixing bowl, combine 1 cup of pumpkin puree and 1/4 cup of almond butter. Stir until fully combined.
  2. Add in 1 cup of rolled oats, 1/2 cup of protein powder, 1/4 cup of honey or maple syrup, 1 teaspoon of cinnamon, and 1/2 teaspoon of nutmeg.
  3. Mix all the ingredients together until they form a sticky yet cohesive dough. If the mixture feels too dry, add a teaspoon more of almond butter or honey.
  4. If you’re using chocolate chips, fold them into the mixture until evenly distributed.
  5. Once your mixture is ready, use your hands to roll the dough into small balls, about 1 inch in diameter.
  6. Place the protein balls on a baking sheet lined with parchment paper and refrigerate for at least 30 minutes to allow them to firm up.

Notes

For perfect results, chill the balls for at least 30 minutes to set and enhance flavors. Store in an airtight container in the fridge for up to a week or freeze for longer storage.
