Prepare the Dough:
In a mixing bowl, combine 200 g of wheat flour and 1 1/2 tbsp sugar.
Next, add in 100 g of butter and mix it until integrated with your fingers.
Beat in 1 egg until the dough forms.
Let the dough rest in the refrigerator for about 10 minutes.
Bake the Crust:
Preheat your oven to 180°C (356°F).
Roll out the dough on a floured surface and transfer it to a greased pie dish.
Trim the edges and poke holes in the bottom with a fork.
Pre-bake the crust for 10 minutes in the oven.
Make the Filling:
In a bowl, mix the pumpkin puree with the 120 g of sugar.
In a separate bowl, beat 2 eggs and add 10 ml of vanilla essence.
Combine the egg mixture with the pumpkin puree until well mixed.
Assemble and Bake:
Pour the pumpkin filling into the pre-baked crust.
Bake in the oven for approximately 30 minutes at 180°C (356°F) or until the filling is set.
