Preparation
- Preheat your oven to 350°F (175°C). Line two baking sheets with parchment paper.
- In a large bowl, cream together the softened butter, brown sugar, and granulated sugar until fluffy. Add in the canned pumpkin and eggs, mixing until well combined.
- In another bowl, whisk together the flour, baking soda, ground cinnamon, ground nutmeg, and salt.
- Gradually add the dry ingredients to the wet mixture, stirring until just combined. Fold in the rolled oats.
- Using a spoon or cookie scoop, drop tablespoons of dough onto the prepared baking sheets about 2 inches apart.
Baking
- Bake in preheated oven for 12-15 minutes or until the edges are golden brown. Remove from oven and let cool completely.
Filling Preparation
- In a separate bowl, beat together the cream cheese and powdered sugar until smooth. Add in 1 teaspoon vanilla extract and mix again.
Assembly
- Once the cookies have cooled, spread a generous amount of the cream cheese filling on the bottom of one cookie and top it with another, creating a sandwich.
