Ingredients
  

For the cookies
  • 1 cup canned pumpkin
  • 1 cup brown sugar
  • 1/2 cup granulated sugar
  • 1 cup butter, softened
  • 2 large eggs
  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/2 teaspoon salt
  • 3 cups rolled oats
  • 1 teaspoon vanilla extract
For the filling
  • 2 cups powdered sugar
  • 1/2 cup cream cheese, softened
  • 1 teaspoon vanilla extract (for filling)

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C). Line two baking sheets with parchment paper.
  2. In a large bowl, cream together the softened butter, brown sugar, and granulated sugar until fluffy. Add in the canned pumpkin and eggs, mixing until well combined.
  3. In another bowl, whisk together the flour, baking soda, ground cinnamon, ground nutmeg, and salt.
  4. Gradually add the dry ingredients to the wet mixture, stirring until just combined. Fold in the rolled oats.
  5. Using a spoon or cookie scoop, drop tablespoons of dough onto the prepared baking sheets about 2 inches apart.
Baking
  1. Bake in preheated oven for 12-15 minutes or until the edges are golden brown. Remove from oven and let cool completely.
Filling Preparation
  1. In a separate bowl, beat together the cream cheese and powdered sugar until smooth. Add in 1 teaspoon vanilla extract and mix again.
Assembly
  1. Once the cookies have cooled, spread a generous amount of the cream cheese filling on the bottom of one cookie and top it with another, creating a sandwich.

Notes
