Preparation
  1. Preheat your oven to 375°F (190°C).
  2. Cook the pumpkin gnocchi according to the package instructions until they float to the surface.
  3. In a large mixing bowl, combine the cooked gnocchi with spinach, ricotta cheese, garlic powder, salt, and pepper. Stir until well combined.
  4. In a baking dish, layer the gnocchi mixture. Sprinkle the mozzarella and grated Parmesan evenly over the top.
  5. Drizzle lightly with olive oil and bake for about 30 minutes or until the cheese is bubbly and golden.
  6. Remove from the oven, let it cool for a few minutes, and garnish with fresh basil before serving.

Notes

For a lighter flavor, substitute ricotta with cottage cheese. Ensure you don’t overcook the gnocchi in boiling; they should float just enough. Avoid using too much oil to prevent greasiness. Leftovers can be refrigerated for up to 3 days and reheated in the oven or microwave.
