For the Casserole
  • 1 loaf brioche or challah bread cubed (about 12 cups)
  • 6 large eggs
  • 2 cups milk
  • 1 cup pumpkin puree
  • 1/2 cup brown sugar
  • 1 teaspoon vanilla extract
  • 2 teaspoons pumpkin pie spice (or a mix of cinnamon, nutmeg, and ginger)

Preparation
  1. Cube the bread into bite-sized pieces, preferably using slightly stale bread for better absorption.
  2. In a large bowl, whisk together the eggs, milk, pumpkin puree, brown sugar, vanilla extract, and pumpkin pie spice until smooth.
  3. Gently fold the cubed bread into the custard mixture, ensuring all pieces are coated evenly. Allow to sit for about 10 minutes to soak in the flavors.
Baking
  1. Preheat your oven to 350°F (175°C). Pour the mixture into a greased 9x13-inch baking dish.
  2. Bake in the preheated oven for 40-45 minutes, or until the top is golden brown and the custard is set.
Serving
  1. Once baked, allow to cool slightly before serving. Top with whipped cream or a sprinkle of powdered sugar for added delight.

Notes

Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat individual portions in the microwave or warm oven.
