  • 6 pieces hard-boiled eggs
  • 2 tablespoons mayonnaise
  • 1 teaspoon mustard
  • ¼ teaspoon paprika Optional additional for garnish

Preparation
  1. Boil the Eggs: Place the eggs in a pot, cover them with water, and bring it to a boil. Once boiling, cover the pot and remove it from heat. Let the eggs sit for 12 minutes.
  2. Cool and Peel: Transfer the eggs to an ice bath to cool rapidly. Once cool, gently tap the eggs on a counter and peel off the shells.
  3. Prepare the Filling: Cut the eggs in half lengthwise. Carefully scoop out the yolks into a mixing bowl and set the egg white halves aside.
  4. Mix Ingredients: In the bowl with the yolks, add mayonnaise, mustard, paprika, salt, and pepper. Mash together until smooth and creamy.
  5. Fill the Egg Whites: Fill the egg white halves with your yolk mixture. Optionally, sprinkle a little extra paprika on top for color.
  6. Garnish: Decorate each egg with olive slices to mimic little pumpkin stems and sprinkle with chives or green onions.
  7. Chill and Serve: Place the deviled eggs in the refrigerator until you're ready to serve.

Notes

For an extra creamy filling, you can add a dollop of Greek yogurt. Make sure not to overboil the eggs to maintain a creamy texture. Store leftovers in an airtight container in the refrigerator for up to 3 days.
