Ingredients

Pumpkin Filling Ingredients
  • 1 can Canned Pumpkin Puree 15 ounces
  • 1 cup Granulated Sugar
  • 2 large Eggs
  • 1 teaspoon Vanilla Extract
  • 1 teaspoon Ground Cinnamon
  • 1/2 teaspoon Ground Nutmeg
  • 1 teaspoon Baking Powder
  • 1/2 teaspoon Salt
Crisp Topping Ingredients
  • 1 1/2 cups Old-Fashioned Oats
  • 1/2 cup Brown Sugar Packed
  • 1/2 cup All-Purpose Flour
  • 1/3 cup Unsalted Butter Melted

Method

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a mixing bowl, combine canned pumpkin puree, granulated sugar, eggs, vanilla extract, cinnamon, nutmeg, baking powder, and salt. Whisk until smooth and fully combined.
  3. Pour the pumpkin mixture into a greased 9x13-inch baking dish, spreading it evenly across the bottom.
  4. In a separate bowl, mix together the oats, brown sugar, and flour. Drizzle the melted butter over the oat mixture and combine until it resembles coarse crumbs.
  5. Evenly sprinkle the oat topping over the pumpkin layer, ensuring it covers the filling completely.
Baking
  1. Place the dish in the preheated oven and bake for 30-35 minutes, or until the crisp topping is golden brown and the pumpkin is set.
  2. Remove from the oven and let it cool for about 10 minutes before serving.

Notes

Serve warm with a scoop of vanilla ice cream or whipped cream. Use fresh spices for the best flavor and consider adding mix-ins like nuts or chocolate chips.
