Preparation
- Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners or grease it lightly.
- In a bowl, combine the softened cream cheese with 1/4 cup of sugar. Mix until smooth and creamy, then set aside.
Mixing
- In a large mixing bowl, whisk together the pumpkin puree, vegetable oil, eggs, and remaining sugars until just combined. Be careful not to overbeat.
- In another bowl, whisk together the flour, baking soda, baking powder, cinnamon, salt, and nutmeg.
- Gradually add the dry ingredients to the pumpkin mixture, stirring gently until just combined. Avoid overmixing!
Swirling and Baking
- Spoon a layer of the pumpkin batter into each muffin cup, then add a dollop of the cream cheese mixture on top. Use a toothpick or knife to create a swirl by gently mixing the two layers.
- Bake in the preheated oven for 20-25 minutes, or until a toothpick inserted in the center comes out clean.
Cooling
- Let them cool in the pan for about 5 minutes, then transfer to a wire rack. Enjoy them warm!
Notes
Top Tips: You can substitute whole wheat flour or use honey/maple syrup as sweeteners. Check muffins before the stated bake time, and avoid overmixing the batter.
