Preparation
- Preheat your oven to 350°F (175°C) and grease or line a muffin tin with paper liners.
- In a large bowl, combine the pumpkin puree, sugar, brown sugar, vegetable oil, milk, eggs, and vanilla extract. Whisk until smooth.
- In a separate bowl, mix together the flour, baking powder, cinnamon, nutmeg, cloves, and salt.
- Gradually add the dry ingredients to the wet ingredients, stirring gently until just combined. Be careful not to overmix; a few lumps are okay!
- Scoop the batter into the prepared muffin tin, filling each cup about three-quarters full.
- Sprinkle the cinnamon sugar generously on top of each muffin.
Baking
- Place the muffin tin in the preheated oven and bake for 20-25 minutes or until a toothpick inserted in the center comes out clean.
- Allow the muffins to cool in the tin for about 5 minutes before transferring them to a wire rack to cool completely. Enjoy them warm or at room temperature!
Notes
