Preparation
- Preheat your oven to 350°F (175°C) and prepare a 9x5-inch loaf pan by greasing it or lining it with parchment paper.
- In a large bowl, mix the canned pumpkin, vegetable oil, sugar, and eggs until smooth. Stir in vanilla extract.
- In another bowl, combine all-purpose flour, baking soda, baking powder, salt, ground cinnamon, and ground nutmeg.
- Gradually fold the dry ingredients into the wet ingredients until just combined. Avoid overmixing; gently fold in the chocolate chips.
- In a small bowl, mix flour and sugar for the streusel. Cut in softened butter until the mixture looks like coarse crumbs.
- Pour the batter into the prepared loaf pan and evenly sprinkle the streusel topping over it.
Baking
- Bake in the preheated oven for 60 minutes or until a toothpick inserted in the center comes out clean.
- After baking, let the bread cool in the pan for 10 minutes, then transfer to a wire rack to cool completely before slicing.
Notes
For better texture, avoid overmixing the batter. Store in an airtight container at room temperature for up to 3 days or freeze for up to 3 months.
