Ingredients
  

Wet Ingredients
  • 1 cup canned pumpkin Use pure canned pumpkin, not pumpkin pie filling.
  • 1/2 cup vegetable oil Can substitute with melted coconut oil.
  • 1 cup sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract Adds great flavor.
Dry Ingredients
  • 2 cups all-purpose flour Do not pack the flour when measuring.
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1 cup chocolate chips
Streusel Topping
  • 1/2 cup streusel topping Made from flour, sugar, and butter.

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) and prepare a 9x5-inch loaf pan by greasing it or lining it with parchment paper.
  2. In a large bowl, mix the canned pumpkin, vegetable oil, sugar, and eggs until smooth. Stir in vanilla extract.
  3. In another bowl, combine all-purpose flour, baking soda, baking powder, salt, ground cinnamon, and ground nutmeg.
  4. Gradually fold the dry ingredients into the wet ingredients until just combined. Avoid overmixing; gently fold in the chocolate chips.
  5. In a small bowl, mix flour and sugar for the streusel. Cut in softened butter until the mixture looks like coarse crumbs.
  6. Pour the batter into the prepared loaf pan and evenly sprinkle the streusel topping over it.
Baking
  1. Bake in the preheated oven for 60 minutes or until a toothpick inserted in the center comes out clean.
  2. After baking, let the bread cool in the pan for 10 minutes, then transfer to a wire rack to cool completely before slicing.

Notes

For better texture, avoid overmixing the batter. Store in an airtight container at room temperature for up to 3 days or freeze for up to 3 months.
