- In a large mixing bowl, whisk together the dry ingredients: flour, sugar, baking powder, baking soda, salt, and pumpkin pie spice.
- In another bowl, mix the wet ingredients: pumpkin puree, milk, egg, and melted butter. Stir until just combined.
- Gradually add the wet mixture to the dry ingredients, stirring until just combined. Fold in the chocolate chips.
Cooking
- Heat a non-stick skillet or griddle over medium heat, greasing lightly if necessary.
- Pour about 1/3 cup of batter onto the skillet for each pancake. Cook until bubbles form on the surface (approximately 2-3 minutes), then flip and cook for another 2-3 minutes until golden brown.
- Stack pancakes, drizzle with syrup, and add your favorite toppings. Serve warm.
Notes
Consider using whole wheat flour for a healthier twist and store leftovers in an airtight container in the fridge for 2-3 days.
