  • 1/2 cup vegetable oil
  • 2 pieces eggs
  • 1 teaspoon vanilla extract

  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg

  • 1 cup chocolate chips Use Halal compliant chocolate chips.

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) and grease a 9×5-inch loaf pan.
  2. In a large bowl, combine the mashed bananas, pumpkin puree, sugar, brown sugar, vegetable oil, eggs, and vanilla extract. Mix well until smooth.
  3. In another bowl, whisk together the all-purpose flour, baking soda, baking powder, salt, cinnamon, and nutmeg. Slowly add this mixture to the wet ingredients, stirring gently until just combined.
  4. Gently fold in the chocolate chips, ensuring even distribution but avoiding overmixing.
  5. Pour the batter into the prepared loaf pan, smoothing the top. Bake in the preheated oven for 60-70 minutes or until a toothpick inserted in the center comes out clean.
  6. Once baked, remove from the oven and let it cool in the pan for about 10 minutes. Then transfer to a wire rack to cool completely. Slice and serve!
