Preparation
- Preheat your oven to 350°F (175°C).
- In a large mixing bowl, combine the softened butter, pumpkin puree, cream cheese, sugar, brown sugar, and vanilla extract. Use a hand mixer until smooth and creamy.
- In a separate bowl, whisk together the flour, baking soda, cinnamon, ginger, nutmeg, and salt.
- Gradually add the dry mixture to the wet mixture, mixing until just combined.
- Fold in chocolate chips if using.
- Using a cookie scoop or tablespoon, drop dough onto lined baking sheets, spacing them about 2 inches apart.
Baking
- Place in the oven and bake for 12-15 minutes or until the edges are lightly golden. Keep the centers soft.
Cooling
- Remove from the oven and let cool on baking sheets for 5 minutes before transferring to a wire rack to cool completely.
Notes
For a Halal-friendly alternative, use vegan cream cheese. Store cookies in an airtight container at room temperature for up to 5 days, or refrigerate/freezing up to 3 months. Microwave for 10-15 seconds to warm.
