Preparation
- Preheat your oven to 350°F (175°C).
- In a large mixing bowl, cream together softened butter, granulated sugar, and brown sugar until smooth and fluffy. Add the softened cream cheese and beat until well combined.
- Mix in eggs (one at a time), vanilla extract, and pumpkin puree. Ensure everything is well-blended.
- In a separate bowl, whisk together all-purpose flour, baking soda, baking powder, ground cinnamon, ground nutmeg, and salt.
- Gradually add the dry mixture to the pumpkin mixture, stirring until just combined. Avoid overmixing.
- Using a cookie scoop or spoon, drop rounded tablespoons of dough onto a greased or parchment-lined baking sheet, leaving space between cookies.
Baking
- Bake in the preheated oven for approximately 12-15 minutes, or until a toothpick inserted comes out clean.
Cooling
- Allow cookies to cool on the baking sheet for about 10 minutes, then transfer to a wire rack to cool completely.
Serving
- Enjoy the cookies with your favorite hot beverage!
Notes
For a slightly healthier version, consider replacing some of the flour with whole wheat flour and using coconut oil instead of butter for a non-dairy alternative. Store in an airtight container at room temperature for up to a week, or freeze for up to three months.
