Ingredients
  

Cheese Mixture
  • 8 oz cream cheese, softened
  • 1 cup shredded cheddar cheese
  • 1/2 cup grated Parmesan cheese
  • 1/2 cup pumpkin puree
Seasoning
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 1/4 tsp cayenne pepper
Coating and Garnish
  • 1/4 cup chopped walnuts or pecans (for coating)
  • Fresh herbs (for garnish)

Method
 

Preparation
  1. In a mixing bowl, combine the softened cream cheese, shredded cheddar cheese, Parmesan cheese, and pumpkin puree. Mix these ingredients until they’re well-combined and smooth.
Seasoning
  1. Add garlic powder, onion powder, salt, black pepper, and cayenne pepper to the mixture. Stir well until everything is evenly distributed.
Shape the Ball
  1. After mixing, shape the cheese mixture into a ball using your hands. Don’t worry about perfection—an organic shape will give it an artisanal look!
Coating
  1. Place the chopped walnuts or pecans on a plate and roll the cheese ball in the nuts until it’s well-coated on all sides.
Chill
  1. Wrap the cheese ball in plastic wrap and refrigerate for at least 1 hour. This helps the flavors meld and makes it easier to slice.
Serve
  1. Before serving, transfer the cheese ball to a serving plate and garnish it with fresh herbs. Put out an array of crackers, apple slices, or veggies for dipping.

Notes

Store in the refrigerator wrapped in plastic wrap or in an airtight container for up to 5 days, or freeze for up to a month. Thaw in the fridge to serve cold.
