  • 1/2 cup granulated sugar
  • 1/2 cup brown sugar
  • 1/2 cup vegetable oil
  • 2 large eggs
  • 1 teaspoon vanilla extract
Dry Ingredients
  • 1 cup all-purpose flour Can be substituted with gluten-free flour for a gluten-free option.
  • 1/2 cup cocoa powder
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. Grease a 9×9-inch baking pan or line it with parchment paper.
  3. In a large mixing bowl, whisk together the pumpkin puree, granulated sugar, brown sugar, vegetable oil, eggs, and vanilla extract until fully combined and smooth.
  4. In another bowl, whisk together the flour, cocoa powder, baking powder, salt, ground cinnamon, and nutmeg.
  5. Gradually add the dry ingredients into the wet mixture while folding gently until no streaks of flour remain.
  6. Pour the batter into the prepared baking pan and spread it evenly.
  7. Bake for 25-30 minutes, or until a toothpick inserted in the center comes out clean.
  8. Allow the brownies to cool in the pan for about 10-15 minutes before transferring them to a wire rack to cool completely.
  9. Cut into squares and enjoy!

Notes

Store in an airtight container at room temperature for up to 3 days. Refrigerate for a week or freeze wrapped tightly for up to 3 months. To reheat, microwave for 15-20 seconds.
