  • 1 cup all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
Wet Ingredients
  • 1 cup pumpkin puree not pumpkin pie filling
  • 1 cup granulated sugar
  • 1/2 cup vegetable oil can substitute with unsweetened applesauce
  • 2 large eggs
  • 1 teaspoon vanilla extract

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C). Grease and flour a 9x13 inch baking dish or line it with parchment paper.
  2. In a medium bowl, whisk together the flour, baking powder, baking soda, salt, ground cinnamon, and ground nutmeg. Set aside.
  3. In a large mixing bowl, combine the pumpkin puree, sugar, vegetable oil, eggs, and vanilla extract. Blend until smooth.
  4. Gradually stir in the dry ingredient mixture until combined, being careful not to over-mix.
Baking
  1. Pour the batter into the prepared baking dish and spread it evenly.
  2. Bake for 25-30 minutes or until a toothpick inserted in the center comes out clean.
Serving
  1. Allow the pumpkin bars to cool in the pan on a wire rack before slicing them into squares.
  2. Serve fresh, optionally adding powdered sugar or whipped cream.

Notes

For a healthier twist, substitute half the vegetable oil with unsweetened applesauce. Store bars in an airtight container for up to 3 days or refrigerate for up to 5-7 days.
