Preparation
- Preheat your oven to 350°F (175°C). Grease and flour a 9x13 inch baking dish or line it with parchment paper.
- In a medium bowl, whisk together the flour, baking powder, baking soda, salt, ground cinnamon, and ground nutmeg. Set aside.
- In a large mixing bowl, combine the pumpkin puree, sugar, vegetable oil, eggs, and vanilla extract. Blend until smooth.
- Gradually stir in the dry ingredient mixture until combined, being careful not to over-mix.
Baking
- Pour the batter into the prepared baking dish and spread it evenly.
- Bake for 25-30 minutes or until a toothpick inserted in the center comes out clean.
Serving
- Allow the pumpkin bars to cool in the pan on a wire rack before slicing them into squares.
- Serve fresh, optionally adding powdered sugar or whipped cream.
Notes
For a healthier twist, substitute half the vegetable oil with unsweetened applesauce. Store bars in an airtight container for up to 3 days or refrigerate for up to 5-7 days.
