  • 1 sheet puff pastry, thawed
  • 8 ounces wheel of Brie cheese
  • 1 large egg, beaten for egg wash
  • 1-2 tablespoons your favorite fruit jam or honey for flavor enhancement
  • to taste Fresh herbs optional, for added flavor

Method
 

Preparation
  1. Preheat your oven to 400°F (200°C).
  2. On a lightly floured surface, roll out the thawed puff pastry to about 1/8 inch thickness. Cut it into squares or rectangles, roughly 2x2 inches.
  3. Slice the Brie cheese into smaller pieces. If desired, add a dollop of jam or honey on top of each piece of cheese.
  4. Place the Brie (with jam, if using) in the center of your pastry squares. Fold the corners of the pastry over the cheese, pinching to seal.
  5. Using a pastry brush, apply a generous coating of beaten egg over each pastry bite.
  6. Place the assembled bites on a baking sheet lined with parchment paper. Bake for 15-20 minutes, or until the pastry is puffed and golden brown.
  7. Allow them to cool for a few minutes before serving.

Notes

If Brie isn’t your favorite, try using Camembert or goat cheese. Watch them closely in the oven to avoid overcooking. Ensure well-sealed pastries to prevent cheese from oozing out during baking. Store leftovers in an airtight container in the refrigerator for up to 2 days, or freeze before baking.
