  • 0.5 cup cottage cheese
  • 0.5 cup fresh spinach, chopped
  • 0.25 cup bell pepper, diced any color works!
  • 0.25 cup cheese, shredded try cheddar or mozzarella

Preparation
  1. Preheat your oven to 350°F (175°C) to ensure your bites get that perfect fluffy texture.
  2. Lightly grease a muffin tin to prevent sticking. You can use cooking spray or a natural oil.
  3. In a large mixing bowl, crack the 5 eggs and whisk them until well combined. Add the cottage cheese, chopped spinach, diced bell pepper, and shredded cheese. Season with salt and pepper according to your taste.
  4. Carefully pour the egg mixture into the muffin cups, filling each about three-quarters full to allow for rising.
  5. Place the muffin tray in your preheated oven and bake for 15-20 minutes or until the egg bites are set and slightly golden on top.
  6. Remove the bites from the oven and allow them to cool for a few minutes in the tray before gently removing them. Serve warm or at room temperature.
