- In a large mixing bowl, crack the 5 eggs and whisk them until well combined. Add the cottage cheese, chopped spinach, diced bell pepper, and shredded cheese. Season with salt and pepper according to your taste.
- Carefully pour the egg mixture into the muffin cups, filling each about three-quarters full to allow for rising.
- Place the muffin tray in your preheated oven and bake for 15-20 minutes or until the egg bites are set and slightly golden on top.
