Preparation
- Preheat your oven to 350°F (175°C).
- In a large bowl, combine the protein powder, rolled oats, baking powder, and salt. Stir well.
- In another bowl, mix the Greek yogurt, honey (or maple syrup), and vanilla extract until well combined.
- Gradually pour the wet mixture into the dry ingredients and stir until a thick dough forms. Fold in chocolate chips if using.
- Roll tablespoons of dough into balls, place on a lined baking sheet, and flatten them slightly.
- Bake for 12-15 minutes or until lightly golden.
- Let cool on the baking sheet for a few minutes, then transfer to a wire rack to cool completely.
Notes
Store cookies in an airtight container in the refrigerator for up to one week, or freeze for up to three months.
