Ingredients
  

Dumpling Dough
  • 1 cup all-purpose flour
  • 1/2 cup water
Filling
  • 200 g prawns, peeled and deveined Make sure your prawns are fresh.
  • 1/2 cup fresh chives, chopped Bright green chives enhance flavor.
  • 1 tablespoon soy sauce
  • 1 teaspoon sesame oil Adds a nutty flavor.
  • to taste Salt and pepper

Method
 

Prepare the Dough
  1. In a mixing bowl, combine the flour and water. Knead the mixture for about five minutes until it forms a smooth dough. If it’s too sticky, add a pinch more flour.
Let it Rest
  1. Cover the dough with a clean kitchen towel and allow it to rest for about 15 minutes.
Make the Filling
  1. While the dough rests, finely chop the prawns and mix them in a bowl with chives, soy sauce, sesame oil, and a sprinkle of salt and pepper.
Roll and Shape
  1. Once rested, divide the dough into small balls (about the size of a walnut). Roll each ball out into a thin circle, approximately 3-4 inches in diameter.
Fill and Seal
  1. Place about a teaspoon of filling in the center of each dough circle. Fold it over to create a half-moon shape and pinch the edges to seal tightly.
Cook the Dumplings
  1. You can either steam or pan-fry the dumplings. For steaming, place them in a steamer basket and steam for about 10-12 minutes until fully cooked.
  2. For pan-frying, heat a little oil in a skillet, add the dumplings, and cook for 3-4 minutes on each side until golden brown. Add a splash of water and cover to steam for another 5 minutes.
Serve
  1. Serve hot with a dipping sauce or enjoy them plain.

Notes

If you can’t find fresh chives, green onions or scallions work wonderfully as substitutes. Avoid overcrowding the steaming basket or skillet.
