Preparation
  1. Wash and chop the potatoes into bite-sized pieces and trim the green beans. Mince the garlic and set aside.
Cooking
  1. In a large skillet or frying pan, heat the olive oil over medium heat until it starts to shimmer.
  2. Add the diced potatoes to the hot skillet. Season with salt and pepper. Cook for about 10 minutes, stirring occasionally, until they begin to soften and turn golden brown.
  3. Stir in the trimmed green beans and minced garlic into the skillet. Cook for an additional 5-7 minutes, stirring frequently, until the beans are tender and bright green, and the potatoes are fully cooked.
  4. Taste and adjust seasoning if necessary. Serve immediately as a delightful side.

Notes

For a spicier kick, add a pinch of red pepper flakes. Avoid overcrowding the skillet; cook in batches if necessary. Store leftovers in an airtight container in the refrigerator for up to 3 days, or freeze for up to 1 month.
