  • 4 medium medium potatoes, peeled and cubed
  • 2 cups fresh green beans, trimmed
  • 2 tablespoons olive oil high-quality recommended
  • 3 cloves garlic, minced

Method
 

Preparation
  1. Wash and peel the potatoes, then cube them into even pieces for uniform cooking.
  2. Trim the ends off the green beans.
Cooking
  1. In a large pot, bring salted water to a boil. Add the cubed potatoes and cook for about 10-12 minutes until fork-tender.
  2. Once the potatoes are cooked, add the green beans to the same pot and blanch for about 3-4 minutes until vibrant.
  3. Drain the potatoes and green beans, then return them to the pot. Drizzle with olive oil, add the minced garlic, and season with salt and pepper.
  4. Cook over medium heat for 5-7 minutes, stirring occasionally to meld the flavors.
  5. Plate the Potatoes and Green Beans and enjoy.

Notes

For added flavor, consider mixing in diced bell peppers or parsley. Be cautious not to overcook the vegetables, and avoid high heat to prevent burnt garlic.
