  • 4 medium-sized medium-sized potatoes, peeled and diced into cubes
  • 2 cups fresh green beans, trimmed and cut
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • Salt and pepper to taste

Method
 

Preparation
  1. In a large pot, add your diced potatoes and cover them with water. Bring to a boil over medium-high heat and cook for about 10-12 minutes, or until fork-tender.
  2. While the potatoes are cooking, bring a separate pot of lightly salted water to a boil. Add in the green beans and blanch them for about 2-3 minutes until bright green and tender-crisp. Drain and set aside.
  3. In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for 1-2 minutes until fragrant—be careful not to burn the garlic!
  4. Once the potatoes are cooked, drain them and add them directly to the skillet with the garlic. Toss gently to coat the potatoes in the olive oil and garlic.
  5. Add the blanched green beans and toss everything together. Season with salt and pepper to taste, and cook for an additional 2-3 minutes until everything is warmed through.
  6. Remove from heat and serve immediately, or let it cool slightly before enjoying.

Notes

For extra flavor, consider adding Italian herbs or crushed red pepper. Ensure not to overcook the green beans for a crunchy texture.
