Preparation
- Peel and grate the potatoes into a large mixing bowl.
- Add the grated potatoes, sweet corn, chopped onion, flour, cornmeal, and beaten egg to the bowl. Season with salt and pepper to taste. Mix everything well until fully combined.
Cooking
- In a frying pan, heat a generous amount of oil over medium heat. Ensure the oil is hot enough that a drop of the batter sizzles upon contact.
- Scoop about a tablespoon of the mixture into the pan and flatten slightly with the back of a spatula. Fry for about 3-4 minutes on each side or until golden brown.
- Repeat this process, making sure not to overcrowd the pan.
- Once golden, drain the fritters on a paper towel to absorb excess oil.
- Serve your Potato & Sweet Corn Fritters warm with your favorite dipping sauce or as a side dish.
Notes
For extra flavor, consider adding spices like cumin, paprika, or chili powder to the batter. Store leftovers in an airtight container in the refrigerator for up to 3 days, or freeze them before frying for up to a month.
