Ingredients
  

Fritter Base
  • 2 medium potatoes, grated Ensure they're peeled.
  • 1 cup sweet corn (fresh or canned)
  • 1/2 cup all-purpose flour For a gluten-free option, use chickpea flour.
  • 1/4 cup cornmeal
  • 1/4 cup onion, finely chopped
  • 1 large egg, beaten
  • to taste salt and pepper Adjust according to preference.
For Frying

Method
 

Preparation
  1. Peel and grate the potatoes into a large mixing bowl.
  2. Add the grated potatoes, sweet corn, chopped onion, flour, cornmeal, and beaten egg to the bowl. Season with salt and pepper to taste. Mix everything well until fully combined.
Cooking
  1. In a frying pan, heat a generous amount of oil over medium heat. Ensure the oil is hot enough that a drop of the batter sizzles upon contact.
  2. Scoop about a tablespoon of the mixture into the pan and flatten slightly with the back of a spatula. Fry for about 3-4 minutes on each side or until golden brown.
  3. Repeat this process, making sure not to overcrowd the pan.
  4. Once golden, drain the fritters on a paper towel to absorb excess oil.
  5. Serve your Potato & Sweet Corn Fritters warm with your favorite dipping sauce or as a side dish.

Notes

For extra flavor, consider adding spices like cumin, paprika, or chili powder to the batter. Store leftovers in an airtight container in the refrigerator for up to 3 days, or freeze them before frying for up to a month.
