  • 4 cups cold mashed potatoes
  • 1/4 cup flour
  • 1 egg
  • 1/2 teaspoon onion powder
  • Salt and pepper to taste

Instructions
 

  • Prepare the Mashed Potatoes: Start with cold mashed potatoes. If you have leftovers from a previous meal, this is the perfect way to use them. If not, simply mash fresh potatoes with a little water and season to taste.
  • Mix Ingredients: In a large bowl, combine the cold mashed potatoes, flour, egg, onion powder, salt, and pepper. Mix until all ingredients are well combined.
  • Heat the Oil: In a skillet, heat a generous amount of oil over medium heat. You want enough oil to cover the bottom of the pan, allowing the pancakes to fry up nice and crispy.
  • Form and Fry the Pancakes: Scoop about 1/4 cup of potato mixture and form it into a patty. Carefully place it in the hot oil. Repeat with more mixture, but don’t overcrowd the pan.
  • Cook Until Golden: Fry each pancake for about 3-4 minutes on each side until they're golden brown and crispy.
  • Drain: Once cooked, transfer the pancakes to a plate lined with paper towels to absorb excess oil.
  • Serve: Enjoy warm with your favorite toppings!
