Ingredients
  

Wet Ingredients
  • 1 cup unsalted butter, softened Bring to room temperature for easier mixing.
  • 3/4 cup granulated sugar
  • 3/4 cup packed brown sugar
  • 2 large eggs Use at room temperature.
  • 1 teaspoon vanilla extract
Dry Ingredients
  • 2 cups all-purpose flour Sift before measuring.
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
Mix-ins
  • 2 cups crushed potato chips Choose your favorite flavor.
  • optional Chocolate chips or nuts Add for extra flavor.

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.
  2. In a large mixing bowl, cream together the softened butter, granulated sugar, and brown sugar until fluffy. Add in the eggs, one at a time, followed by the vanilla extract. Mix well.
  3. In a separate bowl, whisk together the flour, baking soda, and salt.
  4. Gradually add the dry mixture to the wet mixture, stirring until just combined.
  5. Fold in the crushed potato chips and chocolate chips or nuts, if using.
  6. Use a cookie scoop or tablespoon to drop rounded balls of dough onto the prepared baking sheets, leaving space between each cookie.
Baking
  1. Bake in the preheated oven for 10-12 minutes or until the edges are golden.
  2. Allow the cookies to cool on the baking sheets for a few minutes, then transfer to a wire rack to cool completely.

Notes

For the best texture, don't overmix the dough once adding the flour. Chill the dough for about 30 minutes if too soft to scoop. Store in an airtight container at room temperature for up to a week or freeze for up to three months.
